With peaches in peak season, I’m excited to share this scrumptious, healthier twist on a classic favorite… Peach Coffee Cake! 🍑🍰 This treat brings all the delightful flavors of the traditional coffee cake, but with a wholesome makeover that's perfect for those back-to-school mornings when a cozy cup of coffee is a must, or as a sweet treat for any occasion 😋

Fun Fact: Despite its name, coffee cake doesn’t actually contain coffee. It just pairs beautifully with your morning brew! ☕️ And this peachy version is no exception. It’s perfect with a coffee drink, but also delightful on its own, paired with Greek yogurt for more protein & to make your breakfast more filling, or with a scoop of ice cream for a decadent dessert.

Ingredients:

For the Crumble Topping:

  • 3/4 cup almond flour
  • 1/4 cup vanilla protein powder
  • 1/3 cup melted coconut oil
  • 1/3 cup coconut sugar
  • 1 tsp cinnamon

For the Cake:

  • 1/2 cup nut butter
  • 2/3 cup coconut sugar
  • 1 cup almond milk
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 2 cups oat flour
  • 1/2 cup corn or arrowroot starch
  • 1/2 cup collagen powder
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of salt

To Top:

  • 2 cups chopped peaches

Optional Icing:

  • 1/2 cup powdered sugar
  • Almond milk (gradual tbsp’s until desired consistency)

Instructions:

  1. Prepare the Crumble: In a bowl, mix together almond flour, vanilla protein powder, melted coconut oil, coconut sugar, and cinnamon. Chill this mixture while you prepare the cake batter.
  2. Mix the Cake Batter: In another bowl, combine nut butter, coconut sugar, almond milk, lemon juice, and vanilla extract. Once well-mixed, add oat flour, corn (or arrowroot) starch, collagen powder, cinnamon, baking powder, baking soda, and a pinch of salt. Stir until smooth.
  3. Assemble Peaches: Pour the batter into a lined 8x8 pan. Spread the chopped peaches evenly over the batter, gently pressing them in.
  4. Add Crumble: Sprinkle the chilled crumble topping over the peaches.
  5. Bake: Preheat your oven to 350°F. Bake for 30-35 minutes, or until a toothpick comes out clean with a few crumbs clinging to it.
  6. Cool & Drizzle: Let the cake cool completely before drizzling with optional icing made by mixing powdered sugar with almond milk until you reach your desired consistency.
  7. Serve & Enjoy: Slice, serve, and enjoy this perfect, healthier take on a classic coffee cake!
