In a large bowl, mix:

-3 bananas, mashed

-3/4 cup unsweetened applesauce

-1/4 cup maple syrup

-2 eggs

-1 tsp vanilla extract

Then add & mix:

-1 1/2 cup oat flour

-1/2 cup collagen powder

-1 tsp baking powder

-3/4 tsp baking soda

-1/2 tsp salt

-1/4 tsp cinnamon

Finally, fold in:

-3/4 cup blueberries

-1/2 cup coconut flakes

Pour batter into a lined loaf pan & top with additional blueberries & coconut, if desired. Bake at 350 degrees for about 55-60 minutes, until an inserted toothpick comes out clean with a few crumbs clinging to it. Let cool completely before slicing, & enjoy!
