Ingredients:
- 1 cup nut butter
- 1/4 cup coconut oil
- 1/4 cup collagen powder
- 1 tbsp maple syrup
- 1 cup strawberry chia jam (I like to make my own on the stovetop with mashed strawberries + maple syrup + chia seeds)
Instructions:
-
🥜 Melt It Down:
In a bowl, melt together 1 cup nut butter and 1/4 cup coconut oil until smooth and creamy. -
🥣 Mix It Up:
Stir in 1/4 cup collagen powder and 1 tbsp maple syrup until well combined. -
🧁 Prep Your Molds:
Line a muffin tin with about 10 cupcake liners. Use half of the peanut butter mixture to fill each liner with about 1-2 tbsp of peanut butter mixture. Freeze for 15 minutes. -
🍓 Add Strawberry Bliss:
Once the peanut butter layer is set, top each cup with about 1 tbsp of strawberry chia jam. Freeze for another 10 minutes. -
❄️ Top & Freeze:
Add the remaining peanut butter mixture on top of the strawberry layer, smoothing it out. Freeze for an additional 15 minutes until fully set. -
💖 Enjoy!
Remove from liners and enjoy your homemade, no-bake indulgence!
Pro Tip: These cups are great to meal prep and have on hand when you need a sweet hit or healthy, grab-and-go snack. 😋
