One Pan Raspberry Cheesecake Baked Oats

Anyone else find it’s a bit easier to get out of bed in the morning when you know you have some delicious baked oats waiting for you in the fridge?! πŸ™‹πŸ»β€β™€οΈ

Filled with tart raspberries & a rich cheesecake swirl, this easy-to-make, perfect for meal prep, & healthier nutrient-rich recipe is seriously like having dessert for breakfast! πŸ˜‹ Top it with some yogurt & maple syrup or nut butter in the morning, with coffee or tea for an afternoon snack, or enjoy it cold & straight out of the fridge for an oat bar feel πŸ™Œ

In an oiled/lined pan, mix:

-2 bananas, mashed

-2 cups rolled oats

-1/2 cup vanilla protein powder

-1 1/2 tsp baking powder

-1/4 tsp salt

-1 1/2 cups almond milk

-1-2 tbsp maple syrup

-1 tsp vanilla extract

Then fold in:

-1/2 cup raspberries

In dollops, top with:

-1/2 cup frozen raspberries, warmed in the microwave

*cheesecake mix of:

-4 oz vegan cream cheese

-1 tbsp maple syrup

Swirl the mixtures back & forth a few times.

Bake at 350 degrees for about 30-40 minutes, until set. Enjoy!
