Three things come to mind when I first think of March… green 🍀, spring 💐, & pi day lol 🥧 And this recipe’s a great representation of each of these things, including two of March’s in-season produce items: avocado & lime!
The avocado gives these bars their smooth & creamy texture, which pairs perfectly with the sweet & tart key lime pie flavor 😋 And unlike the load of sugar that often comes along with key lime pie, these easy-to-make bars are naturally sweetened & made with simple healthier ingredients! 🙌 Makes 9 bars.
For the crust, in a food processor, blend:
-3/4 cup old-fashioned oats
-1/4 cup vanilla protein powder
-1/4 cup unsweetened coconut flakes
-1/4 cup almonds
-1/4 cup maple syrup
-2 tbsp coconut oil, melted
-1 tbsp lime juice
Press mixture into a lined 8x8 baking pan.
For the filling, blend:
-2 ripe avocados
-1/4 cup vanilla protein powder
-3 tbsp coconut oil, melted
-3 tbsp maple syrup
-1/4 cup lime juice
Pour over the crust & smooth until even.
Freeze for at least an hour, until solid. If desired, top each bar with some fresh lime slices. Enjoy!
