Valentine’s Day may have passed, but chocolate & strawberries always make for a delicious dessert, amirite?! Especially when in pretty pink cheesecake form!

These bars have a chocolate crust, creamy cheesecake layer with both blended & diced strawberries (that tastes like ice cream when frozen!), & topped with some fresh, juicy strawberries 😋 Can you think of anything better?!

How ‘bout that they’re also easy-to-make, protein packed, & healthier, made with just 8 simple ingredients! 🙌 Makes 9 bars.

no-bake strawberry cheesecake bars

For the chocolate crust, mix:

-1 1/2 cups almond flour

-1/4 cup chocolate or vanilla protein powder

-1/4 cup cocoa powder

-3 tbsp coconut oil, melted

-2 tbsp maple syrup

Press an even layer into a lined 8x8 baking pan.

For the strawberry cheesecake, blend until creamy & smooth:

-1/2 cup vegan cream cheese

-1/2 cup greek yogurt

-1/2 cup strawberries

-1/4 cup vanilla protein powder

-2 tbsp maple syrup

Fold in:

-1 cup strawberries, diced

Spread this cheesecake mixture evenly on top of the crust.

Top with:

-sliced strawberries

Place in the freezer for at least 2 hours to allow the cheesecake topping to set. Remove from freezer & let sit at room temperature to thaw before cutting into bars. Enjoy!
