Made with just six simple ingredients & a good source of fiber, antioxidants, & protein, they’re also no-bake & easy-to-make in just one bowl! 🙌

The raspberry, coconut, & white chocolate flavor combination is perfection 😋… so delicious, refreshing, & fruity! And they’re just so fun too, reminding me of cute lil pink snowballs hehe! 😍 Makes about 10-12 bites.

In a bowl, microwave for 30 seconds to 1 minute:

-1 cup frozen raspberries

Mash with a fork.

Then add & mix:

-1 1/2 cup shredded unsweetened coconut

-1/2 cup vanilla protein powder

-3 tbsp maple syrup

Roll mixture into balls & place on a plate. (If mixture is too soft to roll, place in the fridge or freezer for a few minutes to firm up.) Let set in the freezer for about an hour to firm up.

For the white chocolate coating, mix:

-1 cup white chocolate, melted

-2 tsp coconut oil, melted

Use a fork to dip each bite into the melted chocolate or drizzle it on top, & sprinkle some additional shredded coconut. Place in the fridge for at least 20 minutes to set & harden. Enjoy!
