scorpio: miso ginger butternut squash soup

- 1 butternut squash, peeled and cubed
- 1 onion, chopped
- 1 tbsp grated ginger
- 2 garlic cloves
- a drizzle of olive oil
- 3 cups broth
- 1 cup coconut milk
- 1 tbsp white miso
- 2 scoops Radiance
- pepitas, scallion, and chili oil to top
- warm the oil in a big pot and cook the onion for 5 minutes. add the garlic and ginger for 1 more minute, then add the squash and broth. simmer for 20 minutes, until the squash is soft.
- take the pot off the heat, add the coconut milk, and blend until smooth.
- whisk the miso and Radiance into a ladle of the soup until smooth, then stir it back into the pot. top with pepitas, scallion, and a few drops of chili oil.
notes and swaps: the miso goes in last because boiling dulls its flavor. a bag of pre-cubed squash saves 15 minutes. it keeps 4 days in the fridge and freezes well.
sagittarius: chipotle sweet potato and black bean tacos
tacos, because you don't do sit-down dinners when there's a fire pit option.

- 2 sweet potatoes, cubed

capricorn: sheet pan honey dijon chicken with brussels sprouts and apple
one pan, no drama, done before everyone else.

- 6 chicken thighs
- 2 tbsp dijon
- 2 tbsp honey

- a few sprigs of thyme

- heat the oven to 425°F. whisk the dijon, honey, oil, Radiance, the thyme leaves, salt, and pepper into a glaze.
- toss the chicken in half the glaze and the sprouts and apple in a little oil and salt, then spread everything on one sheet pan.
- roast for 25 to 30 minutes, until the chicken reaches 165°F inside. brush on the rest of the glaze for the last 5 minutes.
notes and swaps: bone-in thighs work too; give them 10 more minutes. pears are a good swap for the apple.
aquarius: apple nachos with maple tahini drizzle
the only sign who looked at apples and thought: nachos.

- parsley and cilantro
- cook the onion and pepper in the oil for 6 minutes, add the garlic and spices for 1 minute, then pour in the tomatoes and simmer for 10 minutes.
- make 4 wells in the sauce, crack an egg into each, cover, and cook for 6 to 8 minutes, until the whites are set and the yolks are still soft.

- 1 lb carrots, sliced
- 1 tsp cumin
- 1 lemon
- 3 tbsp olive oil
- ½ cup greek yogurt
- 1 garlic clove, grated
- 1 scoop Radiance
- parsley, dill, and toasted almonds
- heat the oven to 425°F and roast the carrots with 1 tbsp of the oil, the cumin, and salt for 25 minutes. simmer the lentils in salted water for 20 minutes, until tender but not mushy.
- drain the lentils and toss them with the rest of the oil, the lemon juice, salt, and most of the herbs. stir the yogurt, garlic, lemon zest, Radiance, and a pinch of salt into a sauce.
- divide the lentils and carrots into 4 containers, add a spoonful of the sauce to each, and top with almonds and the rest of the herbs.
