Moist & perfectly sweet, this is a delicious breakfast, snack, or dessert that’s protein-packed & also has you enjoying all the many health benefits of matcha. Plus, how festive is this green color, amirite?! 🎄

An easy, one-bowl recipe so you can get back to whatever else you need or want to get done this holiday season 🙌

matcha banana bread

In a bowl, first mix:

-3 bananas, mashed

-2 eggs

-1/3 cup maple syrup

-1/4 cup almond milk

-1/4 cup avocado oil

-1 tsp vanilla extract

Then add:

-2 cups almond flour

-1/4 cup vanilla protein powder

-2 tbsp matcha powder

-2 tsp baking powder

-pinch of salt

Pour into an oiled/lined loaf pan & bake at 350 for about 45-60 minutes, or until a toothpick comes out dry with a few crumbs clinging to it. Let cool completely.

For the optional glaze, mix:

-3/4 cup powdered sugar

-1/4 cup vanilla protein powder

-1 tbsp matcha powder

-gradual tbsps of almond milk until you get the consistency you’d like

Top with optional crushed pistachios for garnish, slice, & enjoy!
