Take all the guesswork out of what to have for breakfast &/or an anytime-of-day snack with this one! It’s got everything you need, prepped & baked in just one pan 🙌
Blueberries are one of May’s seasonal produce items, & the delicious combination of juicy blueberries + shredded coconut just never gets old, amirite?! 😋 Plus, it’s great for meal prep & you only need 9 simple ingredients!
In an oiled/lined pan, mix:
-2 bananas, mashed
-2 cups rolled oats
-1/2 cup vanilla protein powder
-1/4 cup unsweetened coconut flakes
-1 tsp baking powder
-1/4 tsp salt
-1/2 cup blueberries
-1 1/2 cups almond milk
-2 tbsp maple syrup
Sprinkle some more blueberries &/or coconut flakes on top. Bake at 350 degrees for about 25-30 minutes, until set. If desired, top with a dollop of greek yogurt & drizzle of maple syrup. Enjoy!
