May is National Strawberry Month, & with Cinco de Mayo coming up too, these bars are the perfect treat to celebrate. A yummy almond flour crust paired with a tart & creamy strawberry lime filling… they remind me of a summertime cocktail, like a margarita or daiquiri 🍹 Shoot, if you’re feeling so inclined, add a lil splash of tequila to this recipe if you’d like lol! (I haven’t tried this so I can’t vouch for it, but I’ve got a feeling it wouldn’t be too bad 😉)
Other things about these bars that you’re sure to love? They’re naturally sweetened, made with just 9 simple healthier ingredients, & so easy to make too (you’re just mixing or blending, pouring, & then waiting for them to set… no baking necessary which is perfect for the upcoming warmer days!)
A great alternative for when you’re craving something like ice cream or cheesecake, but want something a bit lighter & refreshing 😋 Makes 9 bars
For the crust, mix:
-1 1/2 cups almond flour
-1/2 cup vanilla protein powder
-1/2 cup unsweetened coconut flakes
-1/4 cup coconut oil, melted
-1/4 cup maple syrup
Press an even layer into a lined 8x8 baking pan.
For the filling, blend until creamy & smooth:
-1 cup strawberries
-1/2 cup vegan cream cheese
-1/2 cup greek yogurt
-1/3 cup lime juice
-1/4 cup vanilla protein powder
-2 tbsp maple syrup
-1 tbsp lime zest
Spread evenly on top of the crust.
Place in the freezer for at least 2 hours to allow the filling to set. Remove from freezer & let sit at room temperature to thaw before cutting into bars. If desired, top each bar with some fresh strawberry &/or lime slices. Enjoy!
