For the cherry filling, in a saucepan, combine:
-4 cups cherries, pitted
-2 tbsp lemon juice
-1/4 cup vanilla protein powder
-1/4 cup coconut sugar
-1 tbsp cornstarch
Bring to a boil, then reduce heat & simmer for about 5 minutes, until the mixture is thickened slightly. Transfer to an oiled baking pan.
For the cobbler topping, in a bowl, mix:
-1 1/4 cup almond flour
-1/2 cup vanilla protein powder
-1/3 cup cornstarch
-1 1/2 tsp baking powder
-1/2 tsp cinnamon
-1/4 tsp salt
Then, stir in:
-1/4 cup coconut oil, melted
-1/4 cup maple syrup
-1/4 cup almond milk
Scoop tablespoons of dough, flatten with your hands, & evenly spread over the cherry layer. Bake at 375 degrees for about 25-30 minutes, until the cherries are bubbly & topping is golden brown. Delicious on its own, or served with some greek yogurt or a scoop of ice cream. Enjoy!
