Indulge in the perfect summer treat with these! ☀️ Bursting with lemon flavor & fresh strawberries folded in, these bars are made with wholesome ingredients, are naturally sweetened, & scream ooey gooey deliciousness! An easy-to-make, guilt-free delight for any occasion.
And something I especially love about them is they’re best served chilled. Since they’re ultra moist & soft, I store them in the freezer & leave them out for a few minutes to thaw for a satisfyingly cool, chewy treat 😋 Makes 9 bars.
In a bowl, first mix:
-2 1/4 cups almond flour
-1/2 cup vanilla protein powder
-2/3 cup maple sugar
-6 tbsp coconut oil, melted
-pinch of salt
Then stir in:
-2 lemons, zested & juiced
-3/4 cup diced strawberries
Spread batter evenly into a lined 8x8 pan. Bake at 325 degrees for about 35 minutes, until the top is set, feels firm to the touch, & an inserted toothpick comes out clean. Let cool completely before glazing.
For the glaze, blend:
-1/4 cup coconut butter
-1/4 cup strawberries
-3 tbsp lemon juice
-2 tbsp maple syrup
Pour glaze over the cooled bars & refrigerate for at least 30 minutes to set. Slice into bars. Enjoy!
