Summer is officially here! ☀️ And what better way to start it off than with a refreshingly creamy, tropical treat that’s easy to make & tasty to eat?! 😋 Plus it's vegan, gluten-free, dairy-free, & refined sugar-free! You’ll be wanting this one all summer long 🙌 Makes about 4 servings.

For the classic pineapple whip, blend:

-2 cups frozen pineapple chunks

-1/2 frozen banana

-1/4 cup vanilla protein powder 

-1/4 cup coconut milk

-1/4 cup pineapple juice

(if your high-speed blender struggles to blend all the frozen fruit, you may need to add a small amount of liquid, by the tablespoon; opt for the pineapple juice for more of a fruity flavor. Keep in mind though that you want a soft-serve consistency, so it should be thicker than a smoothie)

For the strawberry whip, blend:

-2 cups frozen strawberries

-1/2 frozen banana

-1/4 cup vanilla protein powder 

-1/4 cup coconut milk

-1/4 cup pineapple juice

(again, if your blender is struggling to blend all the frozen fruit, add more liquid by the tablespoon)

I love alternating scoops of both the pineapple & strawberry, & garnishing mine with some unsweetened shredded coconut, but feel free to top yours with your favorite toppings of choice. Enjoy!
