Not that we ever need a reason to enjoy a donut... but National Donut Day is the 1st Friday of June, & this easy-to-make recipe’s the best way to celebrate! 🎉
A healthier take on your classic donut, these delicious baked donuts are made with wholesome ingredients 😋 They’re light, have a sweet & tangy berry flavor, & are adorably pink without using any food coloring 🙌 Makes 6 donuts.
In a bowl, first mix:
-2 eggs
-2 tbsp coconut oil, melted
-1/4 tsp vanilla extract
-1/2 cup coconut sugar
Then add & mix:
-1 cup almond flour
-1/2 cup vanilla protein powder
-1 tsp baking powder
-pinch of salt
Spoon batter into a ziplock bag with the corner cut off the bottom. Pipe batter into a sprayed donut pan, filling 3/4 of the way full. Bake at 350 degrees for about 12 minutes, until the tops are firm to the touch & a toothpick comes out clean.
Let the donuts cool before dipping them into the tangy-sweet raspberry glaze.
For the raspberry glaze, mix:
-1 cup powdered sugar
-1 tbsp lemon juice
-gradual tbsp’s of raspberry puree (1/2 cup raspberries, pureed in a blender), until you get the consistency you’d like
Let the glaze set, & enjoy!
