Chocolate with peppermint just screams winter wonderland to me, & these peppermint brownie bites are such a fun & easy dessert or snack idea. Protein-packed & made with healthier ingredients, these bites are dipped in chocolate & topped with some crushed candy canes πŸ˜‹ Makes about 9 bites.

For the bites, mix:

-1/4 cup almond flour

-1/4 cup chocolate protein powder

-1/2 cup nut butter

-3 tbsp maple syrup

-3 tbsp almond milk

-1 tsp peppermint extract

Roll into 1 tbsp sized balls & place on a plate. (If mixture is too soft to roll, place in the fridge or freezer for a few minutes to firm up.) Let set in the fridge for 1 hour.

For the chocolate coating, mix:

-3/4 cup dark chocolate chips, melted

-1 tbsp coconut oil, melted

-1/4 cup vanilla or chocolate protein powder

Use a fork to dip each bite into the chocolate mixture until well coated. Sprinkle some crushed up candy canes on top & place back in the fridge for at least 30 minutes to set & harden. Enjoy!
