Because the only thing better than apple pie is an apple pie bar drizzled with some maple glaze, amirite?! 😋
These bars are so simple to make (even easier than apple pie! 😉) & taste just like fall. Cinnamon-spiced chopped apples, a gooey texture, & made with healthier & wholesome ingredients… it’s one of my favorite fall season bakes! 🍂 Makes 9 bars.
For the apples:
In a bowl, mix:
-2 apples, peeled & chopped
-1 tsp cinnamon
-1/4 tsp nutmeg
For the batter:
In a separate bowl, mix:
-1 1/2 cup almond flour
-1/4 cup vanilla protein powder
-1 tsp cinnamon
Heat up:
-1/2 cup nut butter
-3 tbsp maple syrup
Add this to the dry mixture, along with:
-1/2 cup unsweetened applesauce
Mix until combined.
Fold half of the apples through the batter & spread into a lined 8x8 pan, pressing down evenly. Top with remaining apples & if desired, sprinkle an optional 1/4 cup coconut sugar. Bake at 350 for 30 minutes or until golden on top.
After it’s cooled completely, you can drizzle an optional maple glaze on top (1/4 cup powdered sugar, 1 tbsp maple syrup + slowly mix in 1-2 tbsp almond milk to thin until smooth).
Slice, serve, & enjoy! (I especially love these chilled!)
