I have to admit I wasn’t a fan of pecan growing up, but oh how times change lol! That gooey, caramel-like filling & savory nutty crunch? Yes please!
These bars are a healthier option with a high protein base, made with just 8 simple ingredients, & still taste like a delicious slice of classic pecan pie 👏 It might become your new favorite… & not only for the holidays or dessert! Makes 9 bars.
For the crust, in a bowl mix:
-1 1/2 cups almond flour
-1/4 cup vanilla protein powder
-1/4 cup maple syrup
-3 tbsp coconut oil, melted
-1 tsp vanilla extract
-1/4 tsp salt
Press mixture into the bottom of a lined 8x8 pan and bake at 350 degrees for 10-15 minutes or until slightly golden brown. Let cool completely.
For the filling, in a saucepan add:
-1/2 cup coconut oil
-1/4 cup maple syrup
-2/3 cup coconut sugar
-1 tsp vanilla extract
Heat over medium heat, stirring constantly until mixture begins to thicken & bubble. Reduce heat to low.
Stir in:
-2 cups chopped pecans
Let mixture continue to cook for about 1 minute, then pour & evenly spread over the cooled crust. Bake for 18-20 minutes. Let cool for 15 minutes & then set in the fridge for at least 1 hour before slicing & serving. Enjoy!
