I was craving some edible cookie dough, then decided to elevate that into an ice cream sandwich, & I’m so glad I did! 😋 Each sandwich promises a delightful balance of chewy chocolate chip cookie & creamy vanilla ice cream, made with just 7 simple ingredients. I think you’ll really love this one too.
For the cookie dough layers, in a bowl, first mix:
-1 cup cashew butter
-1/4 cup maple syrup
-1 cup almond flour
-1/2 cup collagen powder
-pinch of salt
Then fold in:
-3/4 cup mini chocolate chips
Divide dough into 2 equal parts. Press half of the dough into the bottom of a lined loaf pan. Place another piece of parchment paper on top of that flattened cookie dough layer, & press the other half of the dough into another even slab. Set it in the freezer for about 10 minutes to harden a little. While you’re waiting…
Defrost:
-2 cups vanilla ice cream, or any flavor non-dairy or dairy ice cream you prefer. This will make it easier to spread onto the cookie dough.
Lifting the top cookie dough slab out of the pan, scoop the ice cream on top of the bottom cookie dough & spread it into an even layer. Then top the ice cream with the other cookie dough slab. Cover the pan with plastic wrap & freeze to set for at least 4 hours. Slice into 8 sandwiches & enjoy!
