Easy meal prep that’s prepped & baked in one pan, simple healthier ingredients, yummy chocolate chips, & caffeine baked right into it for a lil boost… your taste buds will have a reason to dance with this one 😋💃🏻🙌

coffee chocolate chip baked oatmeal

In an oiled/lined pan, mix:

-1 banana, mashed

-2 eggs

-1/4 cup nut butter

-1/4 cup pure maple syrup

-1 1/3 cups almond milk

-3 tbsp brewed coffee

-1 tsp vanilla extract

Then add:

-2 1/2 cups rolled oats

-1/4 cup vanilla protein powder

-1 tbsp coffee/espresso powder

-1 tsp baking powder

-1/4 tsp salt

Fold in:

-1/2 cup dark chocolate chips + sprinkle extra chocolate chips on top

Bake at 375 degrees for about 35 minutes, or until a toothpick comes out clean. Let cool for a few minutes before slicing. Enjoy with your favorite toppings of choice!
