-2 eggs

-1 lime, zested & juiced

-¼ cup coconut oil, melted

-¼ cup maple syrup

-½ cup almond flour

-½ cup oat flour

-½ cup collagen powder

-½ tsp baking soda

-¼ tsp salt

-¼ cup shredded coconut

Lime Glaze & Topping (optional):

-½ cup powdered sugar

-lime juice (1 tbsp at a time to desired consistency)

-lime slices & toasted shredded coconut for garnish

Instructions:

Preheat oven to 350°F and line a loaf pan with parchment paper.

In a large mixing bowl, whisk together the mashed bananas, eggs, lime zest & juice, melted coconut oil, and maple syrup until smooth.
