I love me an easy meal prep, one-pan recipe… & this one’s not only made with simple healthier ingredients (including carrots - one of January’s in-season produce items that adds natural sweetness & moisture, & spices like cinnamon & nutmeg to give it a warm comforting flavor), but it tastes like you’re having dessert for breakfast! 😋

Also very much enjoyed as a delicious mid-day snack or late-night treat too though! Try this one out & let me know which time of day you enjoyed it at hehe

carrot cake baked oats

In an oiled/lined pan, mix:

-2 cups rolled oats

-2 cups almond milk

-1 cup shredded carrot

-1/2 cup vanilla protein powder

-1/4 cup nut butter

-1/4 cup chopped pecans

-1/4 cup raisins

-1 tbsp maple syrup

-2 tsp vanilla extract

-2 tsp cinnamon

-1 tsp baking powder

-1/2 tsp nutmeg

-pinch of salt

Bake at 400 degrees for about 35 minutes, until lightly golden. Slice, add your favorite toppings of choice (I love this with some greek yogurt, additional pecans, & maple syrup), & enjoy!
