It’s the ideal dessert to share at your holiday table or enjoy as a breakfast treat with your morning coffee. Topped with a cinnamon maple glaze, this cake is the perfect balance of cozy & indulgent 🙌

Ingredients:

Cake:

-1 1/2 cup mashed sweet potato

-3 eggs

-1 1/2 cups almond flour

-1 cup oat flour

-1/2 cup collagen powder

-1/2 cup maple syrup

-1/3 cup coconut oil, melted

-1 1/2 tsp baking powder

-1 1/2 tsp cinnamon

-1 tsp pumpkin pie spice

Glaze:

-1 cup greek yogurt

-2 tbsp maple syrup

-1 tsp cinnamon

Instructions:

🥣 1. Mix the Cake:

In a large bowl, combine mashed sweet potato and eggs. Then add remaining cake ingredients. Mix until well combined.

🔥 2. Bake:

Pour the batter into a lined 8x8 pan. Bake at 350°F for about 45 minutes, or until an inserted toothpick comes out clean. Let cool completely.

🥄 3. Make the Glaze:

In a small bowl, mix glaze ingredients until smooth.

🍰 4. Top the Cake:

Spread the glaze over the cooled cake and if desired, sprinkle with crushed pecans for an extra crunch (optional!)
