Cause what’s a summer without s’mores, amirite?! 😋 This loaf is everything you love about your favorite banana bread combined with the classic, campfire-inspired gooey s’mores flavor.
And it’s super easy to make too… just mix, pour, & sprinkle! The ingredient list is simple & comes together to form the perfect summertime dessert, snack, or breakfast option.
In a large bowl, mix:
-3 bananas, mashed
-3 eggs
-2 tbsp maple syrup
-1 tsp vanilla extract
Then add & mix:
-2 cups almond flour
-1/2 cup collagen powder
-2 tsp cinnamon
-1 tsp baking soda
-pinch of salt
Fold in:
-1/3 cup chocolate chips
Pour batter into a lined loaf pan & top with:
-3 graham crackers, crushed/roughly chopped
-1/2 cup mini marshmallows
-1/4 cup chocolate chips
Bake at 350 degrees for about 55-60 minutes, until an inserted toothpick comes out clean with a few crumbs clinging to it. (To prevent the marshmallows from burning or becoming too brown, you can cover it with tinfoil after 20-25 minutes if needed.) Let cool for at least 10 minutes before slicing. Enjoy!
