There’s something magical about the combo of pumpkin and banana, especially as the leaves start to fall, amirite?! 🎃🍌🍂✨ And this easy, wholesome recipe is a cozy, delicious twist on a classic… wonderful for breakfast, snack, dessert, or any meal in between!
Ingredients:
Wet:
-1 cup canned pumpkin puree
-2 bananas, mashed
-2 eggs
-1/4 cup coconut oil, melted
-3 tbsp maple syrup
-1 tsp apple cider vinegar
-1 tsp vanilla extract
Dry:
-1 1/2 cups oat flour
-1/2 cup collagen powder
-2 tsp pumpkin pie spice
-1 tsp baking powder
-1/2 tsp baking soda
Optional mix-ins:
-chocolate chips
-chopped pecans or walnuts
Instructions:
🥣1. Mix the Wet Ingredients:
In a large bowl, mix the pumpkin, bananas, eggs, coconut oil, maple syrup, apple cider vinegar, and vanilla.
🥄2. Combine the Dry Ingredients:
Add the oat flour, collagen powder, pumpkin pie spice, baking powder, and baking soda to the wet mixture, and mix to combine. Gently fold in the chocolate chips and/or chopped nuts, if desired.
⏲️3. Pour the Batter & Bake:
Pour the batter into a lined loaf pan, and press some extra chocolate chips and/or nuts into the top if you’d like. Bake at 350°F for about 45 minutes, or until an inserted toothpick comes out clean with a few crumbs clinging to it.

Let cool for at least 15 minutes before transferring to a wire rack to cool completely. Slice and enjoy!
