Ingredients:
-2 eggs
-1/2 cup coconut sugar
-1/2 cup coconut oil, melted
-1 tsp vanilla extract
Dry Ingredients:
-3/4 cup almond flour
-2/3 cup cocoa powder
-1/2 cup collagen powder
-1/4 tsp baking soda
-pinch of salt
Pecan Pie Topping:
-1/2 cup coconut oil
-2/3 cup coconut sugar
-1/4 cup maple syrup
-1 tsp vanilla extract
-1 tbsp almond milk
-2 cups chopped pecans
Instructions:
🍫 1. Make the Brownie Base:
In a large bowl, mix wet ingredients (eggs, coconut sugar, coconut oil, vanilla). In a separate bowl, combine dry ingredients. Add the dry ingredients to the wet, mixing together until fully combined. Pour batter into a lined 8x8 baking dish & bake at 350°F for about 15 minutes, or until an inserted toothpick comes out clean. Let cool.
🥧 2. Prepare the Pecan Topping:
In a saucepan, heat coconut oil, coconut sugar, maple syrup, and vanilla until it boils. Remove from heat, and stir in almond milk and chopped pecans.
⏲️ 3. Assemble & Bake:
Pour the pecan topping over the cooled brownie base and bake at 350°F for about 20 minutes. Let cool, then refrigerate for at least 2 hours to set.
