Ready to end summer on a sweet note? 🍰 This easy-to-make cake balances indulgence with clean healthy ingredients, making it the ultimate treat for your Labor Day festivities! Fluffy & moist, topped with a light & creamy frosting, & fresh berries add a perfect touch of sweetness & delicious summer taste.

Ingredients:

Dry Ingredients:

-1 1/2 cups oat flour

-1 cup almond flour

-1/2 cup collagen powder

-1 tsp baking powder

-1/4 tsp salt

Wet Ingredients:

-1/2 cup greek yogurt

-1/2 cup maple syrup

-1/4 cup almond milk

-2 eggs

-1 tbsp vanilla extract

-1 heaping cup of mixed berries (you can coat them with a little oat flour to keep them from sinking to the bottom of the cake during baking)

Optional Frosting:

-4 oz vegan cream cheese

-3 tbsp greek yogurt

-1/3 cup strawberry jam (I like to make my own on the stovetop with mashed strawberries + maple syrup + chia seeds)

Instructions:

🥣1. Mix Dry Ingredients:

In a large bowl, combine oat flour, almond flour, collagen powder, baking powder, & salt.

🥛2. Mix Wet Ingredients:

In a separate bowl, whisk together greek yogurt, maple syrup, almond milk, eggs, & vanilla.

🍓3. Combine & Fold:

Add the wet ingredients to the dry ingredients & mix until just combined. Gently fold in the mixed berries.

⏲️4. Bake:

Pour batter into a lined 8x8 pan & bake at 350°F for about 40-45 minutes, until a toothpick comes out clean.

🍰5. Cool & Frost:

Allow the cake to cool completely before topping with optional frosting + additional berries, if desired.
