Maple Glazed Pumpkin Donuts

Get ready to savor the flavors of fall! 🎃🍩 These Maple Glazed Pumpkin Donuts are perfect for any autumn celebration or cozy weekend treat. Super easy to make, they’re a  healthier alternative to traditional fried donuts 🙌 Plus, they’re a delicious way to celebrate the season, ideal for gatherings, brunches, or simply indulging at home. Makes about 12 donuts

Ingredients:

Wet:

-1/2 cup pumpkin puree

-3/4 cup maple syrup

-2 eggs

-1/2 cup almond milk

-1/4 cup nut butter

Dry:

-1 1/2 cups oat flour

-1/2 cup collagen powder

-1 1/2 tsp pumpkin spice

-1 tsp cinnamon

-1 tsp baking powder

-1/2 tsp baking soda

-1/2 tsp nutmeg

Maple Glaze:

-1 cup powdered sugar

-2 tbsp maple syrup

-1 tsp vanilla extract

-gradual tbsp’s of almond milk, until you get the consistency you’d like

Instructions:

🥣 1. Mix the Wet Ingredients:

In a bowl, combine pumpkin puree, maple syrup, eggs, almond milk, and nut butter until well mixed.

🥄 2. Add the Dry Ingredients:

Fold in the oat flour, collagen powder, pumpkin spice, cinnamon, baking powder, baking soda, and nutmeg until combined.

🍩 3. Bake:

Transfer the batter to a ziplock bag, and cut the corner off the bottom. Pipe the batter into a sprayed donut pan and bake at 350°F for about 20 minutes, until the tops are firm to the touch and a toothpick comes out clean. Let cool.

🍁 4. Make the Glaze:

Whisk together all glaze ingredients until smooth.

✨ 5. Glaze the Donuts:

Dip the cooled donuts into the glaze, sprinkle with fun toppings if desired, and enjoy!
