-2 eggs

-1 lemon, zested & juiced

-¼ cup coconut oil, melted

-¼ cup maple syrup

-1 tsp vanilla extract

🌿Dry Ingredients:

-1 ½ cups oat flour

-½ cup almond flour

-½ cup collagen powder

-1 tsp baking powder

-½ tsp baking soda

-¼ tsp salt

🫐 Add-ins:

-½ cup fresh blueberries (plus extra for topping)

-¼ cup chopped walnuts or pecans (optional, for a little crunch!)

✨ Lemon Glaze & Topping (optional):

-½ cup powdered sugar

-lemon juice (1 tbsp at a time to desired consistency)

-extra lemon zest for garnish

Instructions:

🥣 1. Prep Your Pan & Oven:
Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
