Once these longer & warmer days hit, I always crave a citrusy pick-me-up… & these delicious bars hit the spot! 😋

They scream spring to me cause they’re basically little bursts of sunshine in a bar ☀️ A shortbread crust paired with a creamy, refreshing lemon filling that’s a perfect mix of sweet & tangy flavors. And lemon is one of April’s seasonal produce items, so this is an easy recipe that puts this in-season ingredient to great use.

The even better part? These healthier bars are oil & butter free, naturally sweetened, & made with just 7 simple ingredients! 🙌 Makes 9 bars.

For the crust, in a bowl mix:

-2 cups almond flour

-1/2 cup vanilla protein powder

-1/2 cup maple syrup

Pour & press dough firmly into the bottom of a lined 8x8 pan. Bake at 350 degrees for about 20 minutes, until lightly golden.

For the filling, in a bowl mix

-4 eggs

-2/3 cup lemon juice

-1/2 cup maple syrup

-1/4 cup almond flour

-1/2 tsp baking powder

-pinch of salt

-zest from 1 lemon

Pour & evenly spread this filling over the crust. Return to the oven to bake for about 30-35 minutes, until the filling is set & not jiggly in the middle. Let cool to room temperature & place in the fridge to chill for at least 4 hours or overnight (or in the freezer to save a little time!) If desired, sprinkle some powdered sugar before slicing into squares, & top each bar with fresh lemon slices. Enjoy!
