Ingredients:

Banana Bread:

-2 ripe bananas, mashed

-1/4 cup molasses

-1/4 cup maple syrup

-2 tbsp coconut oil, melted

-2 eggs

-1 tsp vanilla extract

-1 cup almond flour

-1 cup oat flour

-1/2 cup collagen powder

-2 tsp pumpkin pie spice

-1 tsp ginger

-1 tsp baking powder

-1/2 tsp baking soda

-pinch of salt

Optional Glaze:

-1/2 cup powdered sugar

-2 tsp maple syrup

-almond milk (to thin, gradually add a teaspoon at a time)

Instructions:

🥣 1. Mix:

In a large bowl, combine wet ingredients—mashed banana, molasses, maple syrup, coconut oil, eggs, and vanilla. Stir in the remaining banana bread ingredients until well combined.

🔥 2. Bake:

Pour the batter into a lined loaf pan. Bake at 350°F for about 50-60 minutes, or until a toothpick comes out clean with a few crumbs clinging to it. Let cool.

🍯 3. Optional Glaze:

For extra sweetness, whisk together the glaze ingredients, gradually adding almond milk to reach your desired consistency. Drizzle over the cooled bread and spread evenly.
