Ingredients:

🍯 Wet Ingredients:

-3 ripe bananas, mashed

-2 eggs

-¼ cup coconut oil, melted

-⅓ cup maple syrup

-1 tsp vanilla extract

🌾 Dry Ingredients:

-¾ cup oat flour

-¾ cup almond flour

-½ cup collagen powder

-½ tsp baking soda

-½ tsp cinnamon

-¼ tsp salt

🍓 Mix-ins:

-½ cup chocolate chips

-½ cup fresh strawberries, diced (plus a few extra for topping)

Instructions:

🥣 1. Prep Your Pan & Oven:

Preheat your oven to 350°F. Line or lightly grease a loaf pan.

🍯 2. Mix the Wet Ingredients:

In a large bowl, whisk together the mashed bananas, eggs, melted coconut oil, maple syrup, and vanilla extract until smooth.

🌾 3. Stir in the Dry Ingredients:

Add the oat flour, almond flour, collagen powder, baking soda, cinnamon, and salt. Stir until just combined—don’t overmix.

🍓 4. Fold in the Good Stuff:

Gently fold in the chocolate chips and diced strawberries.

🍽️ 5. Pour & Top:

Pour the batter into the prepared loaf pan. If you’d like, add a few extra strawberry slices and chocolate chips on top for that glow-up effect.

⏱️ 6. Bake:

Bake for 50–60 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay!).
