I love finding ways to incorporate sweet fruits in my chocolate treats, especially brownies. Fortunately, cherries are in season, & these aren’t just your ol’ regular classic brownies… these are healthier & still taste so good!
Soft, chewy & fudgy (kinda halfway between a brownie & cake!) these brownies are rich in chocolate flavor, studded with half-melted chocolate chips & fresh, juicy cherries baked right in 😋 Made in one bowl & with simple ingredients, this recipe’s quick, wholesome, & downright delicious.
In a bowl, first mix:
-1/2 cup unsweetened applesauce
-1/2 cup coconut sugar
-1/2 cup coconut oil, melted
-1 tsp vanilla extract
Then add & mix:
-1 cup almond flour
-3/4 cup unsweetened cocoa powder
-1/2 cup chocolate protein powder
-1/2 tsp salt
-1/4 tsp baking soda
Finally, fold in:
-1/2 cup cherries, pitted & halved or chopped
-1/4 cup chocolate chips
Pour into a lined 8x8 baking pan, & top with additional cherries & chocolate chips, if desired. Bake at 325 degrees for about 35 minutes, until an inserted toothpick comes out clean. Let cool completely before slicing. If desired, drizzle some melted chocolate chips on top. Enjoy!
