With juicy cherries (a nod to lucky red) and sweet orange (symbolizing good fortune), this loaf brings a festive touch to your kitchen—but it’s perfect for any winter day!

Since oranges are in season, this loaf is a wonderful way to embrace fresh beginnings while enjoying a soft, citrusy, and perfectly sweet treat 😋 Each bite is bursting with juicy cherries and bright orange flavor, making it a delightful snack, breakfast, or afternoon pick-me-up.

Ingredients:

Wet Ingredients:

-2 eggs

-1 banana, mashed

-1/3 cup almond milk

-1/4 cup coconut oil, melted

-1 tsp vanilla extract

-1 orange, zested and juiced

Dry Ingredients:

-1 1/4 cups oat flour

-1/2 cup almond flour

-1/2 cup collagen powder

-1/3 cup coconut sugar

-1 tsp baking powder

-1/2 tsp ground cinnamon

-1/2 tsp baking soda

-pinch of salt

Add-ins:

-1 cup frozen cherries, chopped

Optional Glaze:

-1/2 cup powdered sugar

-Orange juice (gradually add 1 tsp at a time to thin)

Instructions:

In a large bowl, whisk together all dry ingredients. In a separate bowl, combine the wet ingredients.

Pour the wet ingredients into the dry ingredients and gently mix until just combined. Fold in the chopped cherries.

Pour the batter into a lined loaf pan and bake at 350°F for 40-50 minutes, or until a toothpick inserted in the center comes out clean. Let cool.

For a sweet citrus touch, whisk together powdered sugar and orange juice, adding juice gradually until the glaze reaches your desired consistency. Drizzle over the cooled loaf.
