🌾 Dry Ingredients:

-1 cup almond flour

-½ cup oat flour

-½ cup collagen powder

-1 tsp baking powder

🫐 Add-ins:

-½ cup blueberries (fresh or frozen – toss in oat flour to prevent sinking)

🍋 Optional Citrus Glaze:

-¼ cup powdered sugar or powdered monk fruit

Instructions:

🥣 1. Prep Your Pan & Oven:
Preheat your oven to 350°F. Lightly grease a donut pan with coconut oil or nonstick spray.

🍯 2. Mix the Wet Ingredients:
In a mixing bowl, whisk together the eggs, maple syrup, yogurt, vanilla extract, lemon zest, and lemon juice until smooth.

🌾 3. Combine the Dry Ingredients:
In another bowl, stir together the almond flour, oat flour, collagen powder, baking powder, and salt.

🫐 4. Fold Everything Together:
Add the dry ingredients to the wet, mixing until just combined. Gently fold in the blueberries.

🍩 5. Fill the Donut Pan:
Spoon or pipe the batter into the greased donut pan, filling each cavity about ¾ full.

⏱️ 6. Bake:
Bake for 12–15 minutes or until the donuts are set and golden around the edges. Let cool in the pan for a few minutes before transferring to a wire rack.

🍋 7. Glaze & Serve:

Tips & Variations:

💡 No donut pan? Try baking them as muffins — just adjust the bake time to 18–22 minutes.
💡 Dairy-free option: Use a dairy-free yogurt alternative like coconut yogurt.
💡 Make them ahead: Store leftovers in an airtight container at room temp for 1–2 days or refrigerate for up to 5.
