It’s officially fall, and you know what that means—apple season! 🍎🍂✨ I couldn’t resist whipping up these soft, moist, fluffy, and perfectly spiced muffins 😋 Made with wholesome ingredients and bursting with fall flavors, they’re perfect for cozy mornings or a sweet snack.
Ingredients:
For the oat crumble topping:
-3/4 cup oats
-1/4 cup oat flour
-1/4 cup diced apples
-3 tbsp maple syrup
-2 tbsp coconut oil, melted
-1/2 tsp pumpkin pie spice
For the muffins:
Wet:
-2 eggs
-1/2 cup unsweetened applesauce
-1/2 cup maple syrup
-1/3 cup nut butter
-2 tsp apple cider vinegar
Dry:
-1 1/2 cups almond flour
-1/2 cup oat flour
-1/2 cup collagen powder
-1 tbsp pumpkin pie spice
-1 tsp baking soda
-pinch of salt
Additional:
-3/4 cup diced apples (to be folded in)
Instructions:
🥣1. Make the Oat Crumble:
Mix all crumble ingredients in a bowl, and place in the fridge to chill.
🥄2. Prep Muffin Batter:
Mix wet and dry ingredients separately, then combine them and mix together gently. Fold in diced apples.
🧁3. Assemble & Bake:
Scoop batter into a lined muffin pan, top with crumble, and bake at 350°F for about 18-20 minutes, or until an inserted toothpick comes out clean. Let cool. If desired, drizzle with a simple icing of 1/2 cup powdered sugar + gradual tbsp almond milk until you reach your desired consistency.
