As October rolls in and Halloween approaches, I can’t resist baking something candy-inspired! Say hello to these delicious almond joy cookies that pack all the flavors of this classic candy bar into a soft, chewy treat! 😍🍫🍪 Made with cleaner ingredients and not much effort to make, they’re a perfect balance of salty-sweet goodness with a delightful chewy texture, and a little crunch from the almonds 😋 Makes about 20 cookies

Ingredients:

Wet:

-1 egg

-1/2 cup nut butter

-1/2 cup maple syrup

-1 tsp vanilla extract

Dry:

-1 1/2 cups almond flour

-1 1/2 cups unsweetened shredded coconut

-1 cup sliced almonds

-1/2 cup collagen powder

-1 tsp baking powder

-1/2 tsp salt

Mix-ins:

-1 cup chocolate chips

Instructions:

🥣 1. Mix the Wet Ingredients:

In a bowl, whisk together the egg, nut butter, maple syrup, and vanilla until smooth.

🥄 2. Combine the Dry Ingredients:

In a separate bowl, mix together the almond flour, coconut, almonds, collagen powder, baking powder, and salt.

👩🏻‍🍳 3. Fold It Together:

Gently fold the dry ingredients into the wet mixture until fully combined, then fold in the chocolate chips.

🍪 4. Scoop the Cookies:

Using a heaping tablespoon, scoop the batter onto a lined baking sheet, leaving a bit of space between each cookie (they won’t spread much).

Bake at 350°F for about 12 minutes, or until golden brown on the edges. Enjoy!
