A nourishing, joy-filled banana bread with cozy tropical vibes ☀️

This soft, summery loaf is inspired by the nostalgic candy bar — but with a mindful twist. Think: toasty coconut, melty chocolate chips, crunchy almonds, and a dreamy vanilla glaze. It's lightly sweet, surprisingly satisfying, and perfect for slow mornings, sunset snacks, or your first week of summer break (!!).

Ingredients:

🍯 Wet Ingredients:

-3 ripe bananas, mashed

-2 eggs

-½ cup coconut oil, melted

-⅓ cup coconut sugar

-1 tsp vanilla extract

🌾Dry Ingredients:

-2 cups oat flour

-½ cup collagen powder

-1 tsp baking soda

-½ tsp salt

🍫Mix-ins:

-¾ cup dark chocolate chips or chunks

-½ cup shredded unsweetened coconut

-⅓ cup sliced almonds (plus a little extra for topping)

🥥Glaze (Optional):

-½ cup powdered sugar

-1–2 tbsp coconut milk (or milk of choice)

-¼ tsp vanilla extract

-pinch of flaky sea salt (for that Almond Joy magic)

Instructions:

1️⃣ Prep Your Oven & Pan:

Preheat your oven to 350°F. Lightly grease or line a loaf pan with parchment paper.

2️⃣ Mix the Dry Ingredients:

In a medium bowl, whisk together oat flour, collagen powder, baking soda, and salt.

3️⃣ Whisk the Wet Ingredients:

In a large bowl, mash the bananas. Add eggs, melted coconut oil, coconut sugar, and vanilla. Whisk until smooth.

4️⃣ Combine + Fold:

Add the dry mix to the wet and stir until just combined. Gently fold in chocolate chips, coconut flakes, and sliced almonds.

5️⃣ Pour + Top:

Pour the batter into the loaf pan. Sprinkle extra sliced almonds on top.

6️⃣ Bake:

Bake for 50–60 minutes, or until a toothpick comes out clean. Let cool completely.

7️⃣ Glaze + Slice (Optional):

In a small bowl, whisk glaze ingredients until smooth. Drizzle over cooled loaf and finish with flaky sea salt. Slice and enjoy!

Tips:

  • Make it gluten-free by using certified GF oat flour.
  • For extra moisture, add 1–2 tbsp yogurt or applesauce to the wet mix.
